This salmon is very mild and delicate. Well worth a try.
INGREDIENTS
» One large yellow onion, cut into 1/8" rounds.
» 1/2 tablespoon olive oil
» One 10 ounce salmon filet, skin-on (a)
» 1/4 teaspoon basil
» 1/4 teaspoon thyme
» 1/4 cup fresh orange juice
» Black pepper, freshly ground
» 1/4 cup low sodium chicken broth
HOW TO MAKE IT
- Sauté onion until golden Move to side of skillet.
- Sear salmon (skin side up) until flesh is lightly Turn over.
- Add remaining ingredients, on top of salmon. Reduce heat, simmer, covered, 5 minutes.
- To serve, cut filet in Place onions on top.
TIPS
This recipe is fast and easy, a good one to make for a party: it’ll fit in one large skillet. Many friends who are not “big” on salmon actually really like this version.
